(you did say unlimited space and funding!)
Varanus panoptes rubidus
Varanus niloticus
(I think they're underrated because they are so common, but they're still beautiful monitors)

I already have the pilbarensis, glauerti & kingorum so something a touch bigger like the komodoensis would make a nice change Laughing
